Mustard-oil and papaya-tenderised chicken wings, grilled till smoky — Bihari kebab style. Ready in 32 minutes including prep.

Ingredients
- Yogurt100 g
- Garam Masala1 tsp
- Salt1 tsp
- Garlic3 cloves, crushed
- Ghee2 tbsp
- Lemon1, juiced
- Chicken Wings600 g
- Mustard Oil2 tbsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Whisk the Ghee, lemon juice, garlic, garam masala and salt into a quick marinade.

Coat the chicken wings completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the chicken wings in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh cilantro and extra lemon.
Chef's tip
Don't move the chicken wings for the first 3 minutes; a proper crust releases itself.
