Raw Balinese sambal matah — shallots, lemongrass and chili heaped over beef. Ready in 20 minutes including prep.

- Lime1, juiced

- Beef500 g, cubed
- Bird's Eye Chilies5
- Lemongrass1 stalk
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the beef — slice, shred or cube it so every forkful gets some.

Toss the beef with the garlic, fresh cilantro and the dressing just before serving.
