Raw Balinese sambal matah — shallots, lemongrass and chili heaped over pork. Ready in 20 minutes including prep.

Ingredients

- Fresh Cilantrohandful, torn
- Olive Oil3 tbsp
- Lime1, juiced
- Shallots6, sliced
- Pork500 g
- Bird's Eye Chilies5
- Lemongrass1 stalk
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the pork — slice, shred or cube it so every forkful gets some.

Toss the pork with the garlic, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
