Raw Balinese sambal matah — shallots, lemongrass and chili heaped over white fish. Ready in 15 minutes including prep.

- White Fish500 g

Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the white fish — slice, shred or cube it so every forkful gets some.

Toss the white fish with the garlic, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
