Raw Balinese sambal matah — shallots, lemongrass and chili heaped over corn fritters base. 15 minutes of mostly hands-off cooking.

- Corn Fritters Base400 g corn
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the corn fritters base — slice, shred or cube it so every forkful gets some.

Toss the corn fritters base with the garlic, fresh cilantro and the dressing just before serving.
