Chana Dal Halwa

A ghee-rich halwa cooked low and slow until the fat separates and the spoon stands happily in it. About 50 minutes from fridge to table.

Ingredients

  • Ghee3 tbsp
  • Sugar1 cup
  • Yellow Split Peas1.5 cups, prepared

Optional extras

  • Golden Raisins2 tbsp
  • Almonds2 tbsp, slivered
  • Green Cardamom3, crushed

Instructions

    Roast the yellow split peas in ghee on a patient medium flame until it smells toasty and turns a shade deeper.

    Pour in the hot liquid (milk or water) carefully — it will splutter — and stir through.

    Add sugar and keep folding until the ghee separates and gleams at the edges.

    Finish with cardamom, almonds and raisins; serve warm.

Mithai rewards low heat and clean pans; rush nothing.
