Moong Dal Kheer

Slow-reduced milk, softened sweetness and cardamom — the celebration bowl that ends every good Indian meal. Ready in 50 minutes including prep.

Ingredients

  • Ghee3 tbsp
  • Yellow Lentils (Toor Dal)1.5 cups, prepared
  • Milk1 litre
  • Sugar1 cup

Optional extras

  • Golden Raisins2 tbsp
  • Almonds2 tbsp, slivered
  • Green Cardamom3, crushed

Instructions

    Bring the milk to a gentle boil and reduce it for 10 minutes, stirring so it never catches.

    Add the yellow lentils (toor dal) and cook until soft and the milk thickens around it.

    Sweeten with sugar, then finish with cardamom and saffron if using.

    Garnish with almonds and raisins; serve warm or chilled — both are correct.

Chef's tip

Ghee first, sweetness later — sugar added too early toughens flour and milk solids.
