Soft milk-sweet morsels — Bengali or Banarasi in spirit, made from honest ingredients and a light hand. Ready in 50 minutes including prep.

Ingredients

  • Paneer250 g
  • Ghee3 tbsp
  • Sugar2 cups

Optional extras

  • Golden Raisins2 tbsp
  • Almonds2 tbsp, slivered
  • Green Cardamom3, crushed

Instructions

    Prepare the base — fresh paneer kneaded smooth, or milk reduced to solids — with no moisture left.

    Cook briefly with sugar until it comes together as a soft dough.

    Shape into flat pedas, thumb-dent the centre, and garnish with saffron or nuts.

    Chill 30 minutes before serving.

Chef's tip

Ghee first, sweetness later — sugar added too early toughens flour and milk solids.
