Soft milk-sweet morsels — Bengali or Banarasi in spirit, made from honest ingredients and a light hand. 50 minutes of mostly hands-off cooking.

Ingredients

  • Yogurt2 cups, hung
  • Ghee3 tbsp
  • Saffrona pinch
  • Sugar1 cup

Optional extras

  • Golden Raisins2 tbsp
  • Almonds2 tbsp, slivered
  • Green Cardamom3, crushed

Instructions

    Prepare the base — fresh paneer kneaded smooth, or milk reduced to solids — with no moisture left.

    Cook briefly with sugar until it comes together as a soft dough.

    Shape into flat pedas, thumb-dent the centre, and garnish with saffron or nuts.

    Chill 30 minutes before serving.
