- Sugar1 cup
- Mango1.5 cups, prepared
- Green Cardamom2
Optional extras
- Golden Raisins2 tbsp
- Almonds2 tbsp, slivered
Instructions
- 1
Bring the milk to a gentle boil and reduce it for 10 minutes, stirring so it never catches.
- 2
Add the mango and cook until soft and the milk thickens around it.
- 3
Sweeten with sugar, then finish with cardamom and saffron if using.
- 4
Garnish with almonds and raisins; serve warm or chilled — both are correct.
Chef's tip
Ghee first, sweetness later — sugar added too early toughens flour and milk solids.
