Wood-oven style pizza crowned with pork over blistered, chewy dough. 58 minutes of mostly hands-off cooking.

Ingredients

  • Heavy Cream200 ml
  • Saltto taste
  • Onion1, sliced into rings
  • Pizza Dough500 g
  • Mozzarella Cheese200 g
  • Olive Oil1 tbsp, for the dish
  • Dried Oregano1 tsp
  • Cheese100 g, grated
  • Pork500 g, cubed

Optional extras

  • Fresh Basilhandful, to finish

Instructions

    Preheat the oven to 250°C with a stone or steel inside — give it the full 45 minutes to saturate with heat.

    Stretch the dough to a thin round, resting it for two minutes halfway if the gluten fights back and springs shut.

    Spread the sauce in a thin, even layer, then scatter the Pork, Onion, and cheese with a light hand.

    Launch onto the hot surface and bake until the rim puffs into an airy cornicione, 6-8 minutes.

    Look for the tell-tales: bubbling cheese, bronzed blisters, a base that lifts cleanly off the stone.

    Finish with Heavy Cream, a lick of olive oil, and a pinch of salt; slice and serve straight away.
