Asparagus Pizza
Wood-oven style pizza crowned with asparagus over blistered, chewy dough. About 48 minutes from fridge to table.
Ingredients
- Heavy Cream200 ml

- Onion1, sliced into rings
- Pizza Dough500 g
- Mozzarella Cheese200 g
- Olive Oil1 tbsp, for the dish
- Dried Oregano1 tsp
- Cheese100 g, grated
- Asparagus400 g

- Fresh Basilhandful, to finish

Preheat the oven to 250°C with a stone or steel inside — give it the full 45 minutes to saturate with heat.

Stretch the dough to a thin round, resting it for two minutes halfway if the gluten fights back and springs shut.

Spread the sauce in a thin, even layer, then scatter the Asparagus, Onion, and cheese with a light hand.

Launch onto the hot surface and bake until the rim puffs into an airy cornicione, 6-8 minutes.

Look for the tell-tales: bubbling cheese, bronzed blisters, a base that lifts cleanly off the stone.

Finish with Heavy Cream, a lick of olive oil, and a pinch of salt; slice and serve straight away.
