Potato Pizza
Wood-oven style pizza crowned with potato over blistered, chewy dough. Ready in 48 minutes including prep.
Ingredients
- Heavy Cream200 ml
- Saltto taste
- Onion1, sliced into rings
- Potato4, cubed
- Pizza Dough500 g
- Mozzarella Cheese200 g
- Olive Oil1 tbsp, for the dish
- Dried Oregano1 tsp
- Cheese100 g, grated
Optional extras
- Fresh Basilhandful, to finish
Instructions

Rack the oven to its top setting with a pizza stone or upturned tray inside and let it heat for a good 45 minutes — 250°C or higher.

Stretch the dough by hand on a floured counter to a 25cm round, leaving a plump rim; never use a rolling pin, it presses out the air.

Spread a thin veil of the sauce to within a finger of the edge — under-saucing is the difference between crisp and soggy.

Scatter over the Potato and Onion, then a drift of cheese, keeping the toppings light and evenly spaced.

Slide the pizza onto the screaming-hot stone and bake 6-8 minutes until the rim blisters and the base is spotted deep brown.

Finish with Heavy Cream and a thread of olive oil the moment it leaves the oven, slice, and serve immediately.
