Tuna Zuppa

Gentle simmered tuna in a fragrant broth, finished with fresh herbs — the italian answer to "something light tonight". About 27 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Fresh Basilsmall handful
  • Olive Oil1 tbsp
  • Dried Oregano1/2 tsp
  • Stock or Broth1 litre
  • Tuna500 g steaks
  • Pasta Shells80 g

Instructions

    Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

    Add the garlic and dried oregano and cook for 30 seconds more.

  3. 3

    Pour in the stock, bring to a simmer, and add the tuna.

  4. 4

    Simmer gently until the tuna is just cooked through and the broth tastes rounded.

    Ladle into warm bowls and top each with fresh basil and a grind of black pepper.

Chef's tip

A final squeeze of lemon just before serving lifts every other flavour.
