Asparagus Zuppa

A clear, restorative italian soup starring asparagus — light on the palate, big on aroma. About 30 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Fresh Basilsmall handful
  • Olive Oil1 tbsp
  • Dried Oregano1/2 tsp
  • Stock or Broth1 litre
  • Asparagus400 g
  • Pasta Shells80 g

Instructions

    Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

    Add the garlic and dried oregano and cook for 30 seconds more.

    Pour in the stock, bring to a simmer, and add the asparagus.

  4. 4

    Simmer gently until the asparagus is just cooked through and the broth tastes rounded.

    Ladle into warm bowls and top each with fresh basil and a grind of black pepper.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
