A clear, restorative italian soup starring cherry tomatoes — light on the palate, big on aroma. 30 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Fresh Basilsmall handful
- Olive Oil1 tbsp
- Dried Oregano1/2 tsp
- Stock or Broth1 litre
- Cherry Tomatoes400 g
- Pasta Shells80 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and dried oregano and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the cherry tomatoes.

Simmer gently until the cherry tomatoes is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh basil and a grind of black pepper.
