Spinach Panini
Warm bread wrapped around savoury spinach, crunchy salad and a cool sauce — handheld happiness. Ready in 23 minutes including prep.
Ingredients
- Yogurt4 tbsp
- Saltto taste
- Spinach300 g
- Tomato2, sliced
- Garlic2 cloves, minced
- Mozzarella Cheese150 g
- Olive Oil1 tbsp
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Ciabatta Bread1 loaf

Season the spinach with the garlic, salt and half the spices, then cook in the Olive Oil until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

Pile the spinach onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
