
Potato Panini
Everything good rolled into one: juicy potato, crisp vegetables and creamy sauce in a soft wrap. About 23 minutes from fridge to table.
Ingredients
- Yogurt4 tbsp
- Saltto taste
- Tomato2, sliced
- Garlic2 cloves, minced
- Potato4, cubed
- Mozzarella Cheese150 g
- Olive Oil1 tbsp
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Ciabatta Bread1 loaf
Optional extras
- Fresh Basilhandful, to finish
Instructions

Season the potato with the garlic, salt and half the spices, then cook in the Olive Oil until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

Pile the potato onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
