Toasted little breads piled high with mussels — the aperitivo hour essential. 10 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Garlic2 cloves, grated
- Lemon1/2, juiced
- Olive Oil3 tbsp, good and fruity
- Dried Oregano1/2 tsp
- Baguette1, sliced
- Mussels800 g, cleaned
Optional extras
- Fresh Basilhandful, to finish
Instructions

Prepare the mussels — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lemon juice, dried oregano and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh basil, and serve with warm bread.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
