A creamy, swooshable italian dip built around pork — built for torn bread and long evenings. 20 minutes of mostly hands-off cooking.

Ingredients

- Garlic2 cloves, grated
- Lemon1/2, juiced
- Fresh Basil60 g
- Olive Oil3 tbsp, good and fruity
- Parmesan Cheese50 g
- Dried Oregano1/2 tsp
- Pork500 g, cubed
- Pine Nuts40 g
Instructions

Prepare the pork — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lemon juice, dried oregano and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh basil, and serve with warm bread.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
