
Ground Beef Fajitas
High heat, big flavour: ground beef seared with aromatics and a shiny sauce that clings to every bite. About 27 minutes from fridge to table.
Ingredients
- Saltto taste
- Garlic4 cloves, minced
- Vegetable Oil2 tbsp
- Bell Pepper1, sliced
- Tomato Sauce2 tbsp
- Ground Beef450 g
- Spring Onions3, cut into batons
- Flour Tortillas6
- Ground Cumin1 tsp

Instructions

Set a heavy cazuela or skillet over medium heat and dry-toast the Garlic until blistered and fragrant, then set aside.

Add the oil and sear the Ground Beef until browned on all sides.

Blend or pound the toasted Garlic with garlic, then fry the paste in the pan oil for two minutes until it darkens and thickens.

Return the Ground Beef, add Ground Cumin, season with salt and cumin, and stir to coat.

Add water or stock to come halfway, and simmer covered until the Ground Beef is tender and the salsa has deepened to a rich rust.

Finish with a squeeze of lime and fresh coriander, and serve with warm tortillas.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
