
Beef Steak Fajitas
A Mexican cazuela classic — seared Beef Steak, char-and-smoke salsa base, and a gentle simmer that leaves the sauce deep rust and spoon-clinging. Coriander and crumbled cheese to finish.
Ingredients

- Garlic4 cloves, minced
- Vegetable Oil2 tbsp
- Bell Pepper1, sliced
- Tomato Sauce2 tbsp
- Spring Onions3, cut into batons
- Flour Tortillas6
- Ground Cumin1 tsp
- Beef Steak500 g

- Fresh Cilantrohandful, to finish
Instructions

Char Garlic directly over a flame or in a dry comal until blackened in patches — this is where the smoke comes from.

Heat the oil in a heavy pan and brown the Beef Steak confidently.

Add the charred, chopped Garlic with Ground Cumin and fry until the mixture darkens and smells sweet-smoky.

Season with salt and a little oregano, add a splash of water, and simmer until the Beef Steak is cooked through.

Reduce until the sauce clings rather than runs, and check the salt one last time.

Serve hot with tortillas, lime wedges, and crumbled cheese over the top.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
