
Pork Shoulder Fajitas
Charred first, then simmered: blistered vegetables and garlic are fried into a rustic salsa base, Pork Shoulder joins the pan, and everything cooks down into a smoky, lime-bright finish. Warm tortillas on the side.
Ingredients
- Saltto taste
- Garlic4 cloves, minced
- Vegetable Oil2 tbsp
- Bell Pepper1, sliced
- Tomato Sauce2 tbsp
- Spring Onions3, cut into batons
- Flour Tortillas6
- Ground Cumin1 tsp
- Pork Shoulder600 g, cubed
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Set a heavy cazuela or skillet over medium heat and dry-toast the Garlic until blistered and fragrant, then set aside.

Add the oil and sear the Pork Shoulder until browned on all sides.

Blend or pound the toasted Garlic with garlic, then fry the paste in the pan oil for two minutes until it darkens and thickens.

Return the Pork Shoulder, add Ground Cumin, season with salt and cumin, and stir to coat.

Add water or stock to come halfway, and simmer covered until the Pork Shoulder is tender and the salsa has deepened to a rich rust.

Finish with a squeeze of lime and fresh coriander, and serve with warm tortillas.
Chef's tip
A final squeeze of lime just before serving lifts every other flavour.
