Jackfruit Fajitas
High heat, big flavour: jackfruit seared with aromatics and a shiny sauce that clings to every bite. 17 minutes of mostly hands-off cooking.
Ingredients
- Saltto taste
- Garlic4 cloves, minced
- Vegetable Oil2 tbsp
- Bell Pepper1, sliced
- Tomato Sauce2 tbsp
- Spring Onions3, cut into batons
- Flour Tortillas6
- Ground Cumin1 tsp
- Jackfruit2 cans
Optional extras
- Fresh Cilantrohandful, to finish
Instructions
- 1
Char Garlic directly over a flame or in a dry comal until blackened in patches — this is where the smoke comes from.
- 2
Heat the oil in a heavy pan and brown the Jackfruit confidently.
- 3
Add the charred, chopped Garlic with Ground Cumin and fry until the mixture darkens and smells sweet-smoky.
- 4
Season with salt and a little oregano, add a splash of water, and simmer until the Jackfruit is cooked through.
- 5
Reduce until the sauce clings rather than runs, and check the salt one last time.
- 6
Serve hot with tortillas, lime wedges, and crumbled cheese over the top.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
