Golden, crackling-crisp fried pinto beans with a soft interior — impossible to eat just one. About 36 minutes from fridge to table.

Ingredients
- Vegetable Oilfor deep-frying
- Eggs2, beaten
- All-Purpose Flour100 g
- Corn Tortillas8
- Ground Cumin1 tsp
- Breadcrumbs150 g
- Pinto Beans2 cans
- Queso Fresco80 g
- Refried Beans300 g
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Pat the pinto beans dry and season with the ground cumin and a little salt.

Set up a breading line: flour, then beaten egg, then breadcrumbs — press the crumbs on firmly.

Heat 4-5 cm of oil to 180°C; a breadcrumb dropped in should sizzle straight away.

Fry the pinto beans in small batches until deep golden, 3-4 minutes per batch.

Drain on a rack, never on paper, and serve hot with fresh cilantro scattered over.
Chef's tip
Keep the oil at a steady 180°C — too cool and the coating goes greasy.
