Crisp-edged patties of beef steak with a soft heart — pan-fried and made for dipping. 32 minutes of mostly hands-off cooking.

Ingredients
- Onion1 small, grated
- Vegetable Oil3 tbsp, for frying
- Eggs1, beaten
- Ground Cumin1 tsp
- Breadcrumbs80 g
- Beef Steak500 g
- Queso Fresco80 g
- Masa Harina300 g
- Refried Beans200 g
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Chop or mash the beef steak finely, then mix with the breadcrumbs, egg, grated onion and ground cumin.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Vegetable Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh cilantro and wedges of lime.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
