Pork Shoulder Sopes

Crisp-edged patties of pork shoulder with a soft heart — pan-fried and made for dipping. 32 minutes of mostly hands-off cooking.

Ingredients

  • Onion1 small, grated
  • Vegetable Oil3 tbsp, for frying
  • Eggs1, beaten
  • Ground Cumin1 tsp
  • Breadcrumbs80 g
  • Pork Shoulder600 g, cubed
  • Queso Fresco80 g
  • Masa Harina300 g
  • Refried Beans200 g

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Chop or mash the pork shoulder finely, then mix with the breadcrumbs, egg, grated onion and ground cumin.

    Season generously, then shape into 8 small patties with wet hands.

    Chill for 15 minutes so they hold their shape in the pan.

    Shallow-fry in the Vegetable Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

    Drain briefly and serve with yogurt, fresh cilantro and wedges of lime.
