Corn Sopes

Crisp-edged patties of corn with a soft heart — pan-fried and made for dipping. About 22 minutes from fridge to table.

Ingredients
- Onion1 small, grated
- Vegetable Oil3 tbsp, for frying
- Eggs1, beaten
- Ground Cumin1 tsp
- Breadcrumbs80 g
- Queso Fresco80 g
- Corn400 g kernels
- Masa Harina300 g
- Refried Beans200 g
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Chop or mash the corn finely, then mix with the breadcrumbs, egg, grated onion and ground cumin.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Vegetable Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh cilantro and wedges of lime.
Chef's tip
For deeper flavour, toast the ground cumin in the oil before adding anything wet.
