White Fish Gorditas

Crisp-edged patties of white fish with a soft heart — pan-fried and made for dipping. 19 minutes of mostly hands-off cooking.

Ingredients
- Onion1 small, grated
- Vegetable Oil3 tbsp, for frying
- Eggs1, beaten
- Ground Cumin1 tsp
- Breadcrumbs80 g
- White Fish500 g
- Masa Harina300 g
- Salsa Verde200 ml
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Chop or mash the white fish finely, then mix with the breadcrumbs, egg, grated onion and ground cumin.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Vegetable Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh cilantro and wedges of lime.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
