
Chorizo Mole
Legendary Oaxacan mole — chorizo under a complex sauce of chilies, chocolate and warm spices. About 85 minutes from fridge to table.
Ingredients
- Saltto taste
- Onion1 large, finely chopped
- Garlic4 cloves, minced
- Vegetable Oil2 tbsp
- Tomato Sauce400 g
- Dried Oregano1/2 tsp
- Ground Cumin1 tsp
- Chili Powder1 tsp
- Chorizo300 g
- Dried Chilies4
- Dark Chocolate30 g
- Peanut Butter2 tbsp

- Fresh Cilantrohandful, to finish
Instructions

Heat the Vegetable Oil in a heavy-bottomed pot over medium heat until shimmering.

Add the onion and cook until golden and softened, 6-8 minutes, stirring so it doesn't catch.

Stir in the garlic plus the ground cumin, chili powder and dried oregano; toast for about a minute until the kitchen smells incredible.

Add the chorizo, turning every piece through the spice base so it's fully coated, and sear lightly.

Pour in the tomato sauce, bring to a gentle bubble, then cover and simmer until the chorizo is tender.

Uncover and reduce until the sauce clings to a spoon. Finish with fresh cilantro and a squeeze of lime.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
