White Fish Mole

Legendary Oaxacan mole — white fish under a complex sauce of chilies, chocolate and warm spices. About 72 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1 large, finely chopped
  • Garlic4 cloves, minced
  • Vegetable Oil2 tbsp
  • Tomato Sauce400 g
  • Dried Oregano1/2 tsp
  • Ground Cumin1 tsp
  • Chili Powder1 tsp
  • White Fish500 g
  • Dried Chilies4
  • Dark Chocolate30 g
  • Peanut Butter2 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Heat the Vegetable Oil in a heavy-bottomed pot over medium heat until shimmering.

    Add the onion and cook until golden and softened, 6-8 minutes, stirring so it doesn't catch.

    Stir in the garlic plus the ground cumin, chili powder and dried oregano; toast for about a minute until the kitchen smells incredible.

    Add the white fish, turning every piece through the spice base so it's fully coated, and sear lightly.

    Pour in the tomato sauce, bring to a gentle bubble, then cover and simmer until the white fish is tender.

    Uncover and reduce until the sauce clings to a spoon. Finish with fresh cilantro and a squeeze of lime.

Chef's tip

A final squeeze of lime just before serving lifts every other flavour.
