
White Fish Birria
Slow-braised white fish in adobo, seared till the edges caramelise — made for dipping. About 57 minutes from fridge to table.
Ingredients
- Saltto taste
- Onion2, halved and sliced
- Garlic4 cloves, crushed
- Vegetable Oil2 tbsp
- Bay Leaf2
- Ground Cumin1 tsp
- Stock or Broth500 ml
- White Fish500 g
- Dried Guajillo Chilies4
- Apple Cider Vinegar2 tbsp

- Fresh Cilantrohandful, to finish
Instructions

Brown the white fish deeply in the Vegetable Oil in a heavy pot — patience here pays off later.

Remove it, then let the onion and garlic soften in the drippings with the ground cumin.

Return the white fish, add the stock and bay leaves, and bring to the gentlest simmer.

Cover and braise low and slow until the white fish yields to a spoon, about 45 minutes.

Skim the fat, reduce the sauce to a glaze, and serve with something starchy to catch every drop.

Skim the fat from the surface before the final reduction for a cleaner sauce.
