Slow-braised black beans in adobo, seared till the edges caramelise — made for dipping. Ready in 73 minutes including prep.

Ingredients

  • Saltto taste
  • Onion2, halved and sliced
  • Garlic4 cloves, crushed
  • Vegetable Oil2 tbsp
  • Bay Leaf2
  • Ground Cumin1 tsp
  • Stock or Broth500 ml
  • Black Beans2 cans
  • Dried Guajillo Chilies4
  • Apple Cider Vinegar2 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Brown the black beans deeply in the Vegetable Oil in a heavy pot — patience here pays off later.

    Remove it, then let the onion and garlic soften in the drippings with the ground cumin.

    Return the black beans, add the stock and bay leaves, and bring to the gentlest simmer.

    Cover and braise low and slow until the black beans yields to a spoon, about 45 minutes.

    Skim the fat, reduce the sauce to a glaze, and serve with something starchy to catch every drop.

Chef's tip

Skim the fat from the surface before the final reduction for a cleaner sauce.
