Beef Steak Barbacoa
Time does the work here: beef steak melts into a glossy braising liquid after a long, gentle simmer. 70 minutes of mostly hands-off cooking.

- Stock or Broth500 ml
- Beef Steak500 g
- Banana Leaves4

Brown the beef steak deeply in the Vegetable Oil in a heavy pot — patience here pays off later.

Remove it, then let the onion and garlic soften in the drippings with the ground cumin.

Return the beef steak, add the stock and bay leaves, and bring to the gentlest simmer.

Cover and braise low and slow until the beef steak yields to a spoon, about 45 minutes.

Skim the fat, reduce the sauce to a glaze, and serve with something starchy to catch every drop.
