Pork Shoulder Barbacoa
Time does the work here: pork shoulder melts into a glossy braising liquid after a long, gentle simmer. 70 minutes of mostly hands-off cooking.

- Stock or Broth500 ml
- Pork Shoulder600 g, cubed
- Banana Leaves4

Brown the pork shoulder deeply in the Vegetable Oil in a heavy pot — patience here pays off later.

Remove it, then let the onion and garlic soften in the drippings with the ground cumin.

Return the pork shoulder, add the stock and bay leaves, and bring to the gentlest simmer.

Cover and braise low and slow until the pork shoulder yields to a spoon, about 45 minutes.

Skim the fat, reduce the sauce to a glaze, and serve with something starchy to catch every drop.
