Citrus-cured pork shoulder tossed with onion, chili and cilantro — bright as the Pacific coast. Ready in 20 minutes including prep.

Ingredients

  • Onion1/2, thinly sliced
  • Fresh Cilantrohandful, torn
  • Olive Oil3 tbsp
  • Lime1, juiced
  • Red Onion1/2
  • Pork Shoulder600 g, cubed

Instructions

    Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the pork shoulder — slice, shred or cube it so every forkful gets some.

  3. 3

    Toss the pork shoulder with the onion, fresh cilantro and the dressing just before serving.

  4. 4

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
