Citrus-cured sweet potato tossed with onion, chili and cilantro — bright as the Pacific coast. 15 minutes of mostly hands-off cooking.

Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the sweet potato — slice, shred or cube it so every forkful gets some.

Toss the sweet potato with the onion, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
