Black Beans Aguachile

Fresh, zingy and full of texture: black beans tossed with herbs and a sharp citrus dressing. About 23 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1/2, thinly sliced
  • Green Chili3
  • Fresh Cilantrohandful, torn
  • Olive Oil3 tbsp
  • Lime1, juiced
  • Cucumber1
  • Black Beans2 cans

Instructions

    Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the black beans — slice, shred or cube it so every forkful gets some.

    Toss the black beans with the onion, fresh cilantro and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
