A bright, herb-packed mexican salad where cauliflower meets a punchy dressing — fresh, loud and addictive. Ready in 15 minutes including prep.

Ingredients

  • Onion1/2, thinly sliced
  • Green Chili3
  • Fresh Cilantrohandful, torn
  • Cauliflower1 head
  • Olive Oil3 tbsp
  • Lime1, juiced
  • Cucumber1

Instructions

    Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

    Prepare the cauliflower — slice, shred or cube it so every forkful gets some.

    Toss the cauliflower with the onion, fresh cilantro and the dressing just before serving.

    Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
