Pork Shoulder Salsa Verde

A creamy, swooshable mexican dip built around pork shoulder — built for torn bread and long evenings. Ready in 20 minutes including prep.

Ingredients

  • Saltto taste
  • Garlic2 cloves, grated
  • Green Chili3
  • Vegetable Oil3 tbsp, good and fruity
  • Fresh Cilantrohandful
  • Lime1/2, juiced
  • Ground Cumin1/2 tsp
  • Pork Shoulder600 g, cubed
  • Tomatillos400 g

Instructions

    Prepare the pork shoulder — roast, boil or mash it depending on what it is, until completely soft.

    Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

    Season with the garlic, lime juice, ground cumin and salt — taste as you go.

    Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh cilantro, and serve with warm bread.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
