A creamy, swooshable mexican dip built around turkey — built for torn bread and long evenings. 20 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Garlic2 cloves, grated
- Green Chili3
- Vegetable Oil3 tbsp, good and fruity
- Fresh Cilantrohandful
- Lime1/2, juiced
- Ground Cumin1/2 tsp
- Turkey500 g
- Tomatillos400 g
Instructions

Prepare the turkey — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lime juice, ground cumin and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh cilantro, and serve with warm bread.
Chef's tip
A final squeeze of lime just before serving lifts every other flavour.
