  • Garlic2 cloves, grated
  • Vegetable Oil3 tbsp, good and fruity
  • Cheddar Cheese150 g
  • Lime1/2, juiced
  • Ground Cumin1/2 tsp
  • Tortilla Chipsfor serving
  • Pinto Beans2 cans
  • Cream Cheese200 g

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Prepare the pinto beans — roast, boil or mash it depending on what it is, until completely soft.

    Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

    Season with the garlic, lime juice, ground cumin and salt — taste as you go.

    Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh cilantro, and serve with warm bread.
