Wheat Dosa the way the udupi counters make it: soft, tangy from the overnight ferment, gone in four bites. Gives you a proper meal in 40 minutes.

Ingredients

  • Saltto taste
  • Fenugreek Seeds1/2 tsp
  • Wheat Flour2 cups
  • Neutral Oil2 tbsp
  • Rice Flour1/4 cup

Optional extras

  • Fresh Cilantroto finish

Instructions

    Grind the soaked rice and dal to a smooth batter; ferment overnight for that tangy lift.

    Heat a cast-iron griddle until a drop of water dances; pour a ladle of batter and spread it thin.

    Drizzle oil or ghee around the edges and cook until the base turns lacy and golden.

    Flip, cook 30 seconds more, and fold onto the plate — crisp outside, soft within.

    Serve with sambar and coconut chutney.

Chef's tip

A pinch of baking soda just before steaming rescues a slow batter.
