
Rava Uttapam
A proper tiffin-plate rava uttapam — fermented batter, patient steam and the smell that fills every South Indian morning. Gives you a proper meal in 40 minutes.
Ingredients
- Yogurt1/2 cup
- Saltto taste
- Onion1, chopped
- Fenugreek Seeds1/2 tsp
- Neutral Oil2 tbsp
- Rice Flour1/4 cup
- Semolina (Rava)1.5 cups
Optional extras
- Fresh Cilantroto finish
Instructions

Grind the soaked rice and dal with the fenugreek into a thick batter; ferment overnight.

Stir in the semolina or flour, salt and a splash of water to a pouring-thick consistency.

Pour a thick round on a hot griddle, spoon the toppings on top and drizzle oil around the edges.

Cook covered on medium until the base is golden and the top is set — uttapam stays soft and pillowy.

Flip for a minute, then serve hot with sambar and coconut chutney.
Chef's tip
A pinch of baking soda just before steaming rescues a slow batter.
