Jaggery Payasam

A bowl of payasam — slow milk, ghee, jaggery, and the quiet pride of a job done patiently. About 50 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Ghee2 tbsp
  • Rice2 cups
  • Milk3 cups
  • Jaggery1 cup
  • Green Cardamom3

Optional extras

  • Fresh Cilantroto finish

Instructions

    Roast the main lightly in ghee until it smells like a festival kitchen.

    Simmer it in milk (or coconut milk) until soft and the liquid turns creamy.

  3. 3

    Melt the jaggery or sugar through on a low flame — no boil after jaggery or it turns grainy.

  4. 4

    Finish with cardamom, fried cashews and raisins; serve warm.

Chef's tip

Ghee first, sweetness later — sugar too early toughens milk solids.
