Fresh, zingy and full of texture: pork shoulder tossed with herbs and a sharp citrus dressing. About 20 minutes from fridge to table.

- Olive Oil3 tbsp
- Lime1, juiced
- Mayonnaise3 tbsp
- Pork Shoulder600 g, cubed
- Corn400 g
- Cotija Cheese80 g
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the pork shoulder — slice, shred or cube it so every forkful gets some.

Toss the pork shoulder with the onion, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
Chef's tip
A final squeeze of lime just before serving lifts every other flavour.
