Ingredients

- Fresh Cilantrohandful, torn
- Olive Oil3 tbsp
- Lime1, juiced
- Mayonnaise3 tbsp
- White Fish500 g
- Corn400 g
- Cotija Cheese80 g
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the white fish — slice, shred or cube it so every forkful gets some.

Toss the white fish with the onion, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
Chef's tip
For deeper flavour, toast the ground cumin in the oil before adding anything wet.
