- Fresh Cilantrohandful, torn
- Olive Oil3 tbsp
- Lime1, juiced
- Mayonnaise3 tbsp
- Black Beans2 cans
- Corn400 g
- Cotija Cheese80 g
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the black beans — slice, shred or cube it so every forkful gets some.

Toss the black beans with the onion, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
