Ingredients

  • Saltto taste
  • Turmeric Powder1/2 tsp
  • Potato2, boiled
  • Eggplant250 g, chopped
  • Breadcrumbs1 cup
  • Ajwain1/4 tsp
  • Red Chili Powder1 tsp

Optional extras

  • Green Chili1, chopped
  • Fresh Cilantro2 tbsp
  • Chaat Masala1 tsp

Instructions

    Mash the base with the potato, spices and herbs until it holds together when pressed.

    Shape into rounds, coat in breadcrumbs, and chill 15 minutes.

    Shallow-fry on medium until deeply golden on both sides.

  4. 4

    Serve hot with ketchup, chutney and onion rings.

Chef's tip

Batter thicker than you think — thin batter slides off and clouds the oil.
