Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, chopped
- Tomato2, chopped
- Turmeric Powder1/2 tsp
- Eggs4
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp
Instructions

Boil or beat the eggs depending on the style the name asks for; a golden jacket on fried eggs is worth the extra minute.

Fry the onion deep gold, add the paste, then the tomatoes and spices; bhunao until the oil separates.

Add the eggs and let them sit in the masala on low for 5 minutes — eggs drink sauce slowly.

Finish with cilantro and serve with roti, rice or toast, whichever the kitchen votes for.
Chef's tip
Prick boiled eggs before they go into gravy — they absorb twice as much.
